Wholesome Healthy Salad with Organic Vegetables & Sprouts

Serves 2.

Ingredients:

1no Zucini weighing abt 150 gms cut into small pieces can be used raw or boil for 2 minutes

1no Brocoliweighing abt 150 gms cut into small pieces can be used raw or boil for 5 minutes

1no Carrot weighing abt 100 gms cut into small pieces

1no red /yellow/green capsicumweighing abt 150 gms cut into small pieces

1no Cucumber weighing abt 100 gms cut into small pieces

1 cup shredded Lettuce

I cup sprouted whole green lentil/Ragi/Brack Gram

For flavor add fresh lemon juice ½ teaspoon, few leaves of basil, salt & pepper powder as per taste.

In a big bowl add all the above after washing in clean water and drain excess water and toss with fork for 2 to 3 minutes. All above ingredients should be Organic only for exotic taste & good health



Recipe 2

Organic Palak(Spinach) with Organic green moong lentil(Broken).

This is a healthy dal dish which can be eaten with rice, chapatti, roti, parata, whole wheat bread too. Or one can eat a large bowl only this dal. Its filling and nutricious.

Ingredients:

Palak/Spinach 250 grams. Remove leaves from stem(You can add some clean stem also), cut in thin shreds wash and keep aside.

Cut one medium size onions (Optional) into small pieces approximately 50 to 70 grams

Cut one medium size tomato into small pieces approximately 50 to 70 grams

Cut 2 to 3 green chilies into medium size abt 1 cms pieces

Cut 1” ginger into small pieces or grate the ginger

Crush 4/5 pieces of garlic(optional)

Salt to taste, Turmeric 1 teaspoon, ½ teaspoon of chilli powder, coriander powder, cumin powder.

Take one cup of Organic green moong lentil(Broken) wash and add it into a pressure cooker, add all the above ingredients except onion, add 300/350 ml water and close the pressure cooker lid and place the whistle and cook it for 15 to 20 minutes or for 4/5 whistles. Take a nonstick kadai and add 1 or 2 table spoon of organic oil(refined vegetable/olive/rice bran)and heat it add seasoning like black mustard, cumin seed, ½ teaspoon garam masala, and once the mustard starts to break approximately after 1 minute in medium fire add cut onions(optional) and fry for abt 2 to 3 minutes in medium fire then add this seasoning to the pressure cooked palak/spinach dal. Add 1 tablespoon of freshly chopped coriander and serve as desired with Rice, chapatti, roti, parata, whole wheat bread. Use only organic ingredients for good health & nutritional values.
